THE DARKSIDE TASTES LIKE IT'S IN THE MIDDLE OF A TRIANGLE THAT'S SIDES ARE A MARTINI A MANHATTAN AND A NEGRONI. WHEN I CAME UP WITH IT, I WANTED TO BUILD A DRINK AROUND BAROLO CHINATO AND BAROLO CHINATO IS A DESSERT WINE THAT TASTES LIKE TONIC WATER. SO, ESSENTIALLY, I WAS TRYING TO MAKE A BOOZY STIRRED DRINK THAT ALSO TASTED LIKE A GINTONIC. 

BAROLO CHINATO IS MADE FROM BAROLO WINE AND MACERATED WITH A VARIETY OF BOTANICALS BUT PRIMARILY CINCHONA BARK (OR QUININE) WHICH IS WHERE THEY GET THE NAME CHINATO. FROM THE FIRST TIME I HAD IT I WAS SUPER INTO IT. IT'S WILD AND I LOVE IT AND CONSEQUENTLY I'LL ALWAYS AFFECTION FOR THIS DRINK.

I FEEL VERY LUCKY AND HONORED FOR THE DARKSIDE TO HAVE BEEN INCLUDED IN A NUMBER OF PUBLICATIONS AND BOOKS, INCLUDING DEREK BROWN'S BOOK "SUGAR SPIRITS WATER BITTERS" JASON WILSON'S BOOK "BOOZEHOUND" AND ROBERT SIMONSON'S APP "MODERN CLASSICS OF THE COCKTAIL RENAISSANCE."
